Carrot Cake

Carrot cake is deceivingly delicious. You might think its gross because it's made of Carrots, but then BAM! All of the flavors hit your tongue and you realize that you just had a taste of heaven. This dessert is one of my favorites for several reasons. First of all, it's made of Carrots, so its got to be healthy. right?  The second reason it's my favorite is because of all the different flavors and ingredients in the cake. And on top of all of these flavors is a smooth, rich cream cheese frosting. Life doesn't get much better.


Ingredients for Cake:

- 3/4 Cup Crushed Walnuts
- 4 Eggs
- 1 1/3 Cup Vegetable Oil
- 1 3/4 Cups Grated Carrots
- 1 Cup Crushed Pineapple, Drained
- 1 Tsp. Baking Soda
- 1 Tbsp. Baking Powder
- 1/2 Tsp. Salt
- 1 1/2 Tbsp. Ground Cinnamon
- 1 3/4 Cup Sugar
- 2 1/3 Cup Cake Flour

Directions for Cake:

1. Preheat oven to 350 F. Lightly grease a 9x13 in. pan.
2. Roughly chop walnuts and place in mixer. Add the eggs and beat lightly to break up eggs.

3. Add the vegetable oil, carrots, and pineapple and mix until combined.




4. Add the baking soda, baking powder, salt, cinnamon, and sugar and stir well. Add the flour and stir until incorporated.




6. Pour batter into pan and bake for 40-45 minutes.


7. remove from oven and let cool completely.




Ingredients for Frosting:

- 8 Oz. Cream Cheese
- 2 Tbsp. Butter
- 2 1/2 Confectioners' Sugar
- 2 Tbsp. Milk
- 1 Tsp. Vanilla ( I didn't have any, so I used Almond Extract)

Directions for Frosting:

1. Place cream cheese and butter in mixer and beat on medium-high for 2-3 minutes, or until completely smooth.



2. Add confectioners' sugar, milk, and vanilla and stir until fluffy.




3. Spread over cool cake.


Voilà!
