Lemon Squares











Ingredients:

Crust
• 2 cups flour
• 1/2 cup confectioners' sugar
• 2 sticks butter (1 cup)

Filling
• 2 cups sugar
• 1/4 cup flour
• 1 teaspoon baking powder
• 1/4 cup lemon juice

Glaze


• 1 cup confectioners' sugar

• 3 tablespoons lemon juice



Preparation:


STEP 1: Preheat oven to 350 degrees. Place flour, confectioners’ sugar and butter in a large bowl and mix with an electric mixer for about 2 minutes or until crumbly.


STEP 2: Press the mixture into the bottom of an ungreased 9 x 13 inch pan and bake for 23-27 minutes… or until lightly brown. Leave the oven on at 350.


STEP 3: Place the eggs, flour, sugar and baking powder in a medium bowl and stir until combined. Add lemon juice and stir until completely smooth.


STEP 4: Poor this mixture over the warm crust and bake for 25-30 minutes or until the top is golden brown. Let cool completely.


STEP 5: Place the confectioners’ sugar and lemon juice in a small bowl and stir until smooth. Smooth the glaze over the bars and let set for 30 minutes. Cut into squares. We sprinkled some powdered sugar over right before we served them... ENJOY!
